Buckeyes – Candies That Kids Can Make!

Buckeyes *****

  • 1 c. peanut butter
  • 2 T. butter
  • 2 c. powdered sugar
  • 1 c. chocolate chips
  • 2 T. vegetable shortening

Cream the peanut butter and butter well, then rub in powdered sugar with the back of your wooden spoon. When it’s all creamed together, oil your very clean hands and roll one heaping teaspoonful into a ball and set on a buttered cookie sheet (or on buttered parchment paper). Repeat until all the candy dough is used up. Freeze one hour.

Over very low heat and stirring constantly, melt the chocolate chips and shortening, whisking until very smooth. With a toothpick, dip the candies as in the picture below, and let cool on a buttered cookie sheet (or on buttered parchment paper).

Store in the fridge in an air-tight container.

Tip – If you want an even quicker candy, add the chocolate chips to the candy dough, roll into balls, then roll the balls in crushed peanuts, coconut, or chocolate jimmies (for cookies and cakes). Chill beside the wine, of which you will need a glass when the sugar hits their little systems.
