Monk’s Tea

I have Googled and I don’t know where you can get Monk’s Tea in Brampton. However, you might want to make your own. From what I could put together, and from what I remember of the tea I had, you will need:

  • 1 c. black Ceylon tea
  • 1 pomegranate
  • 1 t. Madagascar vanilla
  • (1/2 fresh pear, skinned and cored, or 2 pc. dried pear)
  • (1/4 c. fresh berries, or 2 T. dried berries)

Slice the pomegranate very thin, and put it on a baking sheet covered with parchment paper. Set the temperature at 125-150 degrees and check the fruit every hour until it is very dry on both sides, fairly brittle…this may take all night. Snip the pomegranate into bits.

Toss your tea with vanilla, and let it dry in the oven (1 cup of tea to 1 T. vanilla)

You will want to mix the pomegranate and tea half and half and store in an air-tight container. If you decide to add the other fruits, dry them as you did the pomegranate. Experiment until you get the right combination of flavours.

There are also blossoms involved, but which ones they are, I have not yet come across.
